MY BEANS AND PASTA SPECIAL

I had this meal at a friends place last week and I enjoyed it so much that I had to ask her for the recipe, however, she couldn't give it to me then because she was busy attending to other guests so I figured out the recipe myself. We had this for supper tonight and everyone had seconds!!!


I must also apologise for not having any pictures of the finished product to show, that is because I am yet to get myself a camera - covers face in shame bbm style.

Anyways, here goes:

INGREDIENTS

1 derica of black eyed beans(the white type)
1 packet of Eliche pasta
2kg of chicken cut into pieces
2 large green peppers diced
1 can of sweet corn
3/4 tablespoonful of vegetable oil
Curry powder
Thyme
Salt
Garlic powder
Stock cube - Maggi/Knorr Chicken

METHOD

Wash and season the chicken with spices then boil in a pot till cooked. When cooked add about a litre of water to the pot and continue boiling for about 10 - 15mins more to extract more stock.

Rinse the beans in cold water and put in a large pot with cold water to cover the beans. Place on fire and cook till the water boils, then pour into a colander and rinse again with cold water to get rid of the strong beans smell. Also rinse the pot before pouring back the beans into it.

Pour the chicken stock into the pot with the beans, add the pasta and the vegetable oil, season to taste with the spices, Stir to properly mix the ingredients, cover the pot and leave to cook over medium heat.

After about 15min, check the water and the textures of the pasta and beans. If the liquid has been absorbed but the beans or pasta is still hard, then add more water and continue to cook till soft.

When cooked, turn off the heat and stir in the Sweet corn and diced green peppers, cover the pot for about 1minute before serving with fried chicken.
